Homemade Kataifi



Kataifi is a traditional Middle Eastern dessert that consists of shredded pastry, butter, nuts, spices and honey syrup. The pastry becomes crispy and golden when baked and afterwards it is moistened in hot honey syrup. Similar to the famous Baklava but with an entirely different texture.

If you haven't tried Kataifi we advise you to drop everything right now and make it!

It's an easy dessert that looks exceedingly complicated.

It's perfect for every occasion and a wonderful alternative if you want to impress family and friends.

Ingredients 

For the Kataifi

500g Kataifi 
300g Walnuts 
2 tsp cinnamon 
250g butter 
1/2 tsp cloves 

For the Syrup 

600g sugar 
400g water
Lemon peel 
1/4 cup glucose 

1. Place the walnuts in a blender and blend until the walnuts are roughly chopped. Remove from blender and combine the Walnuts with the cinnamon and the cloves. Put aside. 

2. Melt the butter and butter the sides of a pan with a diameter of about 24 cm. 

3. Cut a handful of Kataifi open, spread it on your palm and place a small amount of the walnut filling in the center. Wrap the Kataifi in a roll, folding the sides inwards to seal the filling. 
Transfer it to the buttered pan. Repeat with the rest of the Kataifi and filling. 

4. Line the Kataifi rolls in the buttered pan next to each other. When the pan is full, pour the melted butter over the rolls and bake in a preheated oven at 180° for 50- 60 minuets, until the pastry becomes golden brown. 


5. In a saucepan, boil the sugar, water, lemon peel and glucose for 3 minutes.
While the syrup is still hot, slowly pour it over the Kataifi. Set the Kataifi aside until it cools down and the syrup is fully absorbed,

The same recipe can be made with almonds instead of Walnuts.
