Ingredients

300g cooking chocolate (milk or dark)
1/4 cup caster sugar
1 tbsp cocoa powder, sifted
500 ml thickened cream

Optional
whipped cream to serve
grated chocolate to serve

Method

1. In a heatproof bowl place the chocolate, set the bowl over a pan of gently simmering water, making sure that the bowl doesn't come in contact with the water.
Stir the chocolate until fully melted,
Remove the bowl from the heat and set it aside, allowing the chocolate to cool slightly.

2. In a large bowl place the eggs and sugar. Beat the ingredients with an electric mixer for 5-6 minutes.
Once the mixture is thick and doubled in volume, gently fold in the sifted cocoa powder and the cooled chocolate until the mixture is fully combined.

3. In a separate bowl, whip the cream until it forms a thickened consistency. (Be careful not to overheat)
Use a large metal spoon to carefully fold the cream into the chocolate mixture.

4. Once the chocolate mixture is well combined, spoon it into 6 serving glasses and chill in the fridge for 1 hour.

5. Remove from fridge 15 minutes before serving. Top with extra whipped cream or grated chocolate to serve.
